Burmese Garlic Noodles with Pork - Hsee Chet Khawk Swe

Stir-Fried Burmese Garlic Noodles with Pork
Hsee Chet Khauk Swe in the Bowl
Hsee Chet refers to the garlic oil which is used to stir-fry and garnish this dish. Pancetta is a fatty bacon that the Italians use in pasta. Like fish sauce, oyster sauce and bacon, pancetta is highly salted, so please taste the noodles before adding any salt.

Ingredients (serves 2)
6 oz. bacon or pancetta, diced
2 tsp. garlic oil
2 Tbsp. vegetable oil
1 onion, peeled and diced
8 oz. fresh lo mein noodles
2 Tbsp. fish sauce
1 Tbsp. oyster sauce
A variety of vegetables such as bean sprouts, broccoli, shredded carrots and peas
¼ Romaine or Iceberg lettuce or cabbage, thinly shredded
4 Tbsp. deep fried onions
2 Tbsp. deep fried garlic
Salt to taste

fish sauce
chopped cilantro
lime wedges
roasted chilli flakes

1.    Mix noodles with fish sauce and oyster sauce & set aside.
2.    Heat a skillet and brown the pancetta or bacon.
3.    Sauté the diced onions for about 3 minutes.
4.    Stir-fry vegetables in the same pan, along with pancetta and onions.
5.    Add noodles, mix well and remove from heat.
6.    Stir in shredded lettuce along with fried onions & garlic and transfer to two bowls.
7.    Garnish each bowl with garlic oil, fish sauce, lime, cilantro and roasted chili flakes.
Serve hot.


  1. Chumkie, what would you use instead of the pancetta if you are cooking for a vegetarian? Thank you!

  2. Vegetarians can substitute tofu for the pancetta. The oyster and fish sauces can be replaced with mushroom sauce or soya sauce.
